BREADS OF THE CREATIVE CITIES (ED. 2023)

“Breads of the Creative Cities” publication celebrates the unique breads of the cities within the UNESCO Creative Cities Network (UCCN). It compiles the ingredients, recipes, and cultural stories of iconic breads, which symbolize the cultural and culinary history of each city. The fourth edition of the book, built upon the 2022 edition of Breads of the Creative Cities, has been enriched with new contributions from additional UCCNs: it now includes the stories of breads from 56 UNESCO Creative Cities, representing all seven UCCN creative fields. Further updates include the integration of an artificial intelligence tool to standardize all the bread recipes, and a completely redesigned layout by BoCC’s graphic designers in collaboration with students from the Pacinotti Belmesseri Institute of Design in Pontremoli, Italy.

BREADS OF THE CREATIVE CITIES (ED. 2022)

The book tells the story and culture of more than 100 Knowledge Keepers and UNESCO Creative Cities through ingredients and recipes of their traditional breads. The most universal of all dietary staple is synonymous at the same time with connection and diversity between the various cultures of the world. A collective theme such as bread also helps to reason about global issues, such as green agriculture, nutrition, sustainable development of local communities. The stories of the products, bakers, farmers, and millers, are collected through the Creative Knowledge Platform, highlighting the unique creative assets of their territories.

HANDS AT WORK: LABORATORI DI CARRARA

This editorial project focuses on the Traditional and Creative Knowledge of Carrara; on the stories of the Knowledge Keepers’ who live and interact in Carrara; on the crafts, techniques and knowledge handed down from generation to generation; on the continue evolution of the city’s Genius Loci that has transformed a rough stone into one of the most precious materials for the production of sculptures, architecture and design.

BREADS OF THE CREATIVE CITIES (ED. 2019)

The book is a beautiful collection of ingredients, recipes and cultural stories of traditional breads from 50 UNESCO Creative Cities – each has one or more special breads symbolizing their unique cultures and culinary histories.
It is also a reminder of the deep connections that cultures and societies have through their culinary traditions, and will serve to highlight global issues, such as nutrition, sustainable farming, food production as well as community development and social participation.
The Creative Knowledge Platform methodology has been used to narrate the stories of the bakers, their breadmaking techniques that are touchstones of cultural identities linked to specific places.

THE CHEESE VALLEYS. THE BIRTHPLACE OF THE OROBIC CHEESEMAKING TRADITION

The book focuses on the Traditional and Creative Knowledge of the Italian Orobic Valleys (Bergamo, Lecco e Sondrio) in all their beauty and complexity.  Within these valleys cheese is not perceived as a mere mixture of ingredients (milk, rennet and salt) or a set of tastes and flavors: its making rather becomes an anthropological and cultural heritage.  Communities, expertise and traditional practices, which include the continuous activity of men and animals, have marked the time and the lives of the people of the Orobic Valleys and have transformed the local dairy industry in a source of income and immeasurable pride.
The Creative Knowledge Platform methodology has been used to highlight the Traditional and Creative Knowledge of the cheesemaking traditions and narrate the stories of the contemporary Knowledge Keepers in order to apply for the candidature to the UNESCO Creative Cities Network and become a Creative City in the Gastronomy cluster in 2019.

HANDS AT WORK: CARRARA MARBLE

The book focuses on the Traditional and Creative Knowledge of the city of Carrara in Italy. Carrara is renowned all over the world for its centuries-old know-how of marble quarrying and working techniques, but also for the excellence of its artisans and artists that with their hands transform the marble in masterpieces of art, architecture and design.
The Creative Knowledge Platform methodology has been used to narrate the stories of international sculptors, their creative processes and working techniques that are deeply rooted in the cultural landscape of the city, which has become a UNESCO Creative City, Crafts and Folk Art cluster, in 2017.

THE WHITE ROADS

The book focuses on the traditional landscape of white roads (the unpaved country roads) that have marked the landscape of Italy in the past. They were essential to farmers and their tractors, which are prohibited to travel on paved road, and provided access to vineyards, olive groves and rural fields.
Those that are left today provide an ideal means of exploring a traditional rural landscape by foot or on horses, bicycles, and cars.
